Soft wheat flour, milled from soft wheat varieties (such as soft red winter or soft white wheat), features a lower protein content (typically 8-10%) compared to hard wheat flours, resulting in weaker gluten development. This makes it ideal for creating tender, delicate, and finely crumbed baked goods rather than chewy or structured ones. It promotes a light, flaky, or melt-in-your-mouth texture while absorbing fats well for richness. Nutritionally, whole soft wheat versions retain good amounts of fiber, minerals, and other nutrients when less refined. Soft wheat flour shines in cakes, cookies, pastries, pie crusts, biscuits, scones, muffins, pancakes, and quick breads, where tenderness and a soft crumb are prioritized—often sold as cake flour, pastry flour, or whole wheat pastry flour for these delicate applications.
